    IYKYK, this business will beat you down, physically and mentally. Thrilled i bought it as someone who “lives in color” started as a busboy and now a GM for years. Haven’t been this moved since a soul of a chef(and yes i went to culinary school). Simple yet calculated ways of thinking but written so eloquently. I would love to work for this man even as a bus boy.
